For special occasion...pasta please

Traditionally, fresh pasta was made on days of celebration, or ‘festa’, when special ingredients not normally available were used. It was a communal affair: everyone from grandma (who would roll out the thin pasta dough) to the grandchildren (who’d have to to stuff the ravioli with assorted fillings) got involved.
Nowadays all manner of prepared, pre-packed, pre-frozen and dried pastas are widely available. These will do just fine for your last-minute guests, but for truly special occasions nothing beats a batch of home-made pasta that grandma would have been proud of. All it takes is fresh ingredients, a bit of spare time, a good dose of that old ‘festa’ spirit…and some know-how!
